Ingredients:
- 4-5 leftover chapatis, shredded into small pieces
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal (optional)
- A pinch of asafoetida (hing)
- 8-10 curry leaves
- 1 medium onion, finely chopped
- 1 green chilli, slit (adjust to taste)
- 1/2 tsp ginger-garlic paste (optional)
- 1 small tomato, finely chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder (or to taste)
- Salt to taste
- 1 tbsp lemon juice
- Fresh coriander, chopped for garnish
Method:
- Prep the Chapatis: Take your leftover chapatis and shred them into small, bite-sized pieces. You can tear them by hand or use scissors. Set aside.
- Tempering: Heat oil in a pan on medium heat. Add mustard seeds. Once they splutter, add urad dal (if using) and let it turn light golden. Add hing and curry leaves, let them crackle.
- Sauté Aromatics: Add chopped onions and green chilli. Sauté until the onions turn translucent. If using, add ginger-garlic paste and cook for another minute until the raw smell disappears.
- Add Veggies & Spices: Stir in the chopped tomato. Cook until it softens. Add turmeric powder, red chilli powder, and salt. Mix well and cook for a minute.
- Combine & Cook: Add the shredded chapati pieces to the pan. Mix everything thoroughly, ensuring the chapatis are well coated with the masala. Cook for 2-3 minutes, stirring occasionally, until the chapatis are heated through and slightly softer. You can sprinkle a tablespoon or two of water if the mix feels too dry, but be careful not to make it soggy.
- Finish & Garnish: Turn off the heat. Stir in the lemon juice. Garnish generously with fresh coriander. Serve hot!
